Our understanding of the microscopic structure of strongly coupled nuclear matter in its distinct phases comes primarily from scattering experiments. These are usually in the form of a high energy probe that acts as an Xray for the target . In this talk, I will discuss how Effective Field Theories(EFTs) can be a powerful theoretical tool in analyzing the physics of these multi-scale processes and aid us in pinning down the universal non-perturbative physics of any given phase of QCD. In particular, I ll show how the physics of jets in heavy collisions which probe the hot Quark Gluon Phase of QCD, and Electron-Hadron/ Nucleus collisions that probe its cold Hadronic phase can both be described with the same EFT.
